Versatile Beetroot Soup

Depending on the spices and small ingredient adjustments this can be a refreshing summer soup or a warming winter soup. We will share with you both versions so you can enjoy this incredible healthy and delicious dark red soup all year around!





Let's talk a little bit about the health benefits of this colourful dish. Firstly, phytonutrients give fruits and vegetables their colour. Thus, the more intense the colour the healthier. Next, beets are also very rich in nitrates which help deliver oxygenated blood to your muscles by helping dilate your arteries and also enable your body to extract more energy from that oxygen. Studies show improving athletes performance after drinking beet juice.

The nutritional aspects could go on and on but let's get to the recipe so you can try this delicious soup.



Ingredients for the summer version

  • 1 T Lavana Mix

  • 1 tsp Ghee

  • 1/2 tsp grated turmeric root

  • 3 tomatoes

  • 4 big beetroots, chopped

  • 1/2 liter of hot water

  • juice of 1/2 an orange

  • fresh squeezed lemon juice according to your taste

  • Salt & Long Pepper

  • Optional toppings: sprouts, roasted seeds, lemon zest, fresh parsley

Ingredients for the winter version

  • 1 T Lavana Mix

  • 1 T Ghee

  • 1 T grated ginger

  • 1/2 tsp grated turmeric root

  • fresh chilli to your taste (optional)

  • 1 tomatoe

  • 4 big beetroots, chopped

  • 1 medium sweet potato

  • 1/2 liter of water

  • Salt & Long Pepper

  • Optional toppings: sprouts, roasted seeds, coconut cream, greek yoghurt

Instructions

Roast the ginger/tumeric in ghee and then add the chopped tomatoes. Mix in the remaining spices but leave the salt for the very end. Add the beetroots and chopped sweet potato if you are doing the winter version and 1/2 litre of hot water. Bring everything to boil until the vegetables are soft. Blend everything and season the soup with salt and Long Pepper. At the end you can add lemon juice to your taste. Serve hot or cold and decorate with your favourite toppings.
