Baked Cauliflower with Tahini dressing

For those who think cauliflower is boring and don't know what to do with it. This recipe is for you. Comforting, healthy, fancy and simple dinner!

Cauliflower is a cheap and very healthy vegetable. It is very low in calories yet high in vitamins, minerals and fiber. So, also perfect for a weight loss diet. Here is an overview of the nutrients found in 1 cup, or 128 grams, of raw cauliflower (1):

  • Calories: 25

  • Fiber: 3 grams

  • Vitamin C: 77% of the RDI

  • Vitamin K: 20% of the RDI

  • Vitamin B6: 11% of the RDI

  • Folate: 14% of the RDI

  • Pantothenic acid: 7% of the RDI

  • Potassium: 9% of the RDI

  • Manganese: 8% of the RDI

  • Magnesium: 4% of the RDI

  • Phosphorus: 4% of the RDI

Cauliflower is so versatile and so easy to add into you diet!

Ingredients

  • 1 whole cauliflower

  • 2 T Ghee

  • 1 1/2 tsp Rasa Masala Mix

  • 2 garlic cloves

  • 1/2 tsp salt

For the topping

  • fresh green herbs (parsley, coriander, chive)

  • roasted nuts & seeds (e.g. cashew, pumpkin seeds, sunflower seeds, black sesame seeds)

  • fresh pomegranate seeds

  • Lavana Spice Mix

For the Tahini dressing

  • 2 T Tahini

  • 1/2 cup fresh orange juice

  • 1 T fresh lemon juice

  • 1 T honey

  • 2 T Dijon mustard

  • 1 tsp Vyosha Spice Mix or black pepper

  • 1 pinch of salt

Instructions

Preheat the oven to 180 degrees Celsius. Place the whole cauliflower without the leaves on a baking tray. Finely chop the garlic and mix it with the Rasa Masala Mix, ghee and salt. Rub the cauliflower with this mixture and cover with aluminum foil. Bake in the oven for 60-75 minutes, depending on the size of the cauliflower. Check to see if it is done by piercing the stalk of the cauliflower with a knife. While the cauliflower is in the oven, prepare the tahini dressing by mixing all the ingredients together. Next, toast the selected nuts and seeds. Note that they all have a different roasting point and therefore must be roasted separately, otherwise the small seeds will burn. Chop the fresh green herbs and prepare the pomegranate seeds. Once the cauliflower is ready, cover with the tahini dressing and fresh herbs. Add more spices, salt and extra virgin olive oil if necessary.
